What is Trigonelline?

Trigonelline is a naturally occurring alkaloid found in coffee beansfenugreek seeds (Trigonella foenum-graecum, from which its name derives), and other plants. It is the N-methyl betaine of nicotinic acid (niacin) and serves as a key biomarker for coffee authenticity and quality.
