Sichuan Pepper Extract is a standardized concentrate derived from the dried pericarps of Zanthoxylum bungeanum Maxim. The key bioactive compounds are sanshools, a family of unsaturated alkylamides that include hydroxy-alpha-sanshool, hydroxy-beta-sanshool, and hydroxy-gamma-sanshool. These molecules are responsible for the characteristic tingling and numbing sensation (málà) and have drawn interest for their pharmacological properties.

Our extract is produced via hydroalcoholic extraction followed by concentration and spray drying, yielding a fine powder standardized to ≥95% total sanshools by HPLC. It is designed for use in dietary supplements, functional foods, and research applications where a consistent, high-purity botanical ingredient is required.

Chemical Structure & Properties

Sanshools are alkylamides with a polyunsaturated fatty acid chain linked to an isobutylamine moiety. The presence of multiple cis and trans double bonds contributes to their lipophilic nature and instability under light and heat. The extract is typically off-white to light yellow, with a characteristic pungent taste and aroma. It is soluble in ethanol and other organic solvents, but only slightly soluble in water.
