Mustard Oil Structure

Synonymes : Black mustard oil, Brown mustard oil, Brassica nigra oil, Brassica juncea oil, Allyl isothiocyanate oil, Volatile mustard oil.

Mustard oil is a volatile essential oil obtained by steam distillation of the seeds of black mustard (Brassica nigra) or brown mustard (Brassica juncea). Its characteristic pungency and biological activity stem from allyl isothiocyanate (AITC), an organosulfur compound that makes up the majority of the oil. This reactive electrophile interacts with cellular thiols and modulates key signaling pathways, giving mustard oil a distinct profile compared to fixed oils.

Unlike the pressed fixed oil used in cooking, this essential oil is a specialized ingredient in food, flavor, and pharmaceutical applications. It is standardized to high AITC content and is valued for its antimicrobial, antioxidant, and thermogenic properties. Formulators use it in topical rubefacients, preservative systems, and as a research tool for TRPA1 channel studies.

Structure chimique et propriétés

Allyl isothiocyanate (C4H5NS) is a small, lipophilic molecule with a molecular weight of 99.15 g/mol. It is a colorless to pale yellow liquid with a sharp, lachrymatory odor. The compound is volatile and sensitive to light and heat, so it is typically stored under cool, dark conditions. Its electrophilic isothiocyanate group reacts readily with nucleophiles, which underlies both its antimicrobial action and its handling precautions.

Mécanisme d'action

  • Antimicrobial activity: AITC disrupts microbial cell membranes and inhibits essential enzymes by reacting with sulfhydryl groups, showing broad-spectrum activity against bacteria, fungi, and yeasts.
  • TRPA1 agonism: Activates the TRPA1 ion channel on sensory neurons, producing a warming, pungent sensation and triggering neurogenic inflammation.
  • Antioxidant response: Induces Nrf2-mediated phase II detoxifying enzymes, enhancing cellular antioxidant defenses.
  • Thermogenic effect: Topical application increases local blood flow and generates a warming sensation, useful in analgesic balms and rubefacients.
