Allyl isothiocyanate (AITC) is a naturally occurring organosulfur compound found in plants of the Brassicaceae family, such as black mustard (Brassica nigra), brown mustard (Brassica juncea), horseradish, and wasabi. It is the primary pungent principle responsible for the sharp, irritating taste and smell of these plants. Historically, AITC has been used as a food preservative and flavoring agent, and more recently, it has gained attention in the pharmaceutical and agricultural industries for its antimicrobial and pest-repellent properties.

Chemically, AITC is an isothiocyanate with the formula C4H5NS. It is produced enzymatically from its precursor, sinigrin, a glucosinolate, when plant tissues are damaged. This hydrolysis reaction, catalyzed by myrosinase, yields AITC along with glucose and sulfate. The compound is volatile and reactive, which contributes to its strong biological activity.

Commercial AITC is standardized to ≥98% purity, typically determined by gas chromatography (GC). It is available as a colorless to pale yellow liquid with a characteristic pungent odor. Its high purity makes it suitable for use in food preservation, antimicrobial formulations, and as a precursor in organic synthesis.
