Glycine is the smallest of the 20 standard amino acids and the only one without a chiral center, giving it a unique position in both biochemistry and industrial chemistry. It appears as a white crystalline powder with a sweet taste and is manufactured primarily through the Strecker reaction or by hydrolysis of gelatin, yielding a highly pure product that meets pharmacopeial standards such as USP, EP, and AJI.
Because of its zwitterionic nature and excellent water solubility, glycine serves as a versatile building block in pharmaceutical synthesis, buffering systems, and as a masking agent in metal complexes. It also functions as an inhibitory neurotransmitter in the central nervous system and is widely used in nutraceuticals, food additives, and cosmetics for its moisturizing and pH-stabilizing properties.
