It is produced by neutralizing ascorbic acid with sodium bicarbonate or sodium hydroxide, yielding a stable, non-acidic form of vitamin C that is preferred in many pharmaceutical and food applications. Commercial grades are available as USP/BP/EP/FCC compliant material, with assay typically 99.0%–101.0% on the dried basis.

Because it is essentially neutral in solution, sodium ascorbate avoids the sharp acidity of ascorbic acid and is often chosen for formulations where low pH is undesirable—such as effervescent tablets, liquid supplements, and parenteral nutrition. In the food industry, it functions as an antioxidant and color preservative (E301), while in pharmaceuticals it serves as a vitamin C source in tablets, capsules, and injectables. The compound is also used in cell culture media and as a reducing agent in various chemical processes.
