Whey Protein Concentrate (WPC) is a high-quality protein derived from whey, the liquid byproduct of cheese production. Through a series of filtration steps—typically ultrafiltration—the protein is concentrated while removing much of the lactose, fat, and minerals. The result is a versatile ingredient with a neutral to slightly milky flavor, available in protein levels ranging from 34% to 80%.

WPC contains a full spectrum of essential and branched-chain amino acids (BCAAs), including leucine, isoleucine, and valine, which are key for muscle protein synthesis. It also retains bioactive compounds such as beta-lactoglobulin, alpha-lactalbumin, and immunoglobulins, contributing to its functional properties beyond basic nutrition.

Standard WPC grades are defined by protein content on a dry basis: WPC 34, WPC 50, WPC 70, and WPC 80. The choice of grade depends on the application—lower protein grades are often used in baked goods and beverages for cost efficiency, while higher grades (WPC 80) are preferred in sports nutrition and clinical nutrition where protein density matters. WPC is also valued in the food industry for its emulsification, gelation, and foaming properties.

Function

  • Muscle support: Rich in BCAAs, particularly leucine, to stimulate muscle protein synthesis and aid recovery.
  • Emulsification: Proteins stabilize oil-in-water emulsions, improving texture and shelf life in processed foods.
  • Gelation: Forms heat-induced gels, useful in dairy and meat products for water binding and structure.
  • Foaming: Enhances aeration and foam stability in products like mousses and beverages.
  • Immune support: Contains immunoglobulins and lactoferrin, which may support immune function.

Source & Standardization

  • Source: Bovine whey, a byproduct of cheese manufacturing.
  • Extraction: Ultrafiltration and diafiltration of whey, followed by spray drying.
  • Standardization: Protein content adjusted to 34%, 50%, 70%, or 80% (dry basis).
  • Forms: White to light cream fine powder.
  • Applications: Sports nutrition, clinical nutrition, bakery, beverages, dairy, confectionery.
