Inosine, also known as hypoxanthine or hypoxanthine nucleoside, is a white needle shaped crystal with no odor and a slightly bitter taste. It is a nucleoside compound formed by the binding of hypoxanthine and ribose. In de novo synthesis of purines, inosine monophosphate (IMP) can serve as a precursor for the synthesis of adenosine monophosphate (AMP) and guanosine monophosphate (GMP). The melting point is 218 degrees Celsius. Dissolve 1.6g of product in 100ml of water at 20 ℃.
In the food and beverage industry, inosine and its phosphorylated derivative inosine monophosphate (IMP) are recognized as key umami flavor compounds, widely used as flavor enhancers in combination with guanosine monophosphate (GMP).
