Cinnamaldehyde is an organic compound responsible for the characteristic aroma and flavor of cinnamon. It occurs naturally in the bark of Cinnamomum trees, primarily Cinnamomum cassia and Cinnamomum zeylanicum. While best known as a spice extract, its antimicrobial and flavoring properties have made it a staple in the food, pharmaceutical, and cosmetic industries for over a century.

Chemically, cinnamaldehyde is an unsaturated aldehyde with the formula C9H8O. The trans isomer is the predominant natural form and the commercial standard. It is a reactive electrophile, which underlies its biological activity—it readily forms adducts with nucleophilic groups in proteins and enzymes. This reactivity distinguishes it from more inert aroma compounds and explains both its antimicrobial potency and the need for careful handling in formulation.

Commercial cinnamaldehyde is available in several grades: natural (ex-cinnamon bark oil), synthetic (from benzaldehyde and acetaldehyde via aldol condensation), and kosher/halal certified. Purity typically ranges from 98% to 99.5%, with the higher grades preferred for pharmaceutical and flavor applications where off-notes must be minimized.
