Garlic Oil is a volatile essential oil obtained by steam distillation of fresh garlic bulbs (Allium sativum L.). It has been used for centuries in traditional medicine and culinary practices, valued for its distinctive aroma and broad biological activities.

The oil’s characteristic pungency and biological effects are primarily due to organosulfur compounds, notably diallyl disulfide (DADS) and diallyl trisulfide (DATS), along with smaller amounts of allyl propyl disulfide and other thioethers. These sulfur species are formed from allicin, a transient intermediate that rapidly degrades during distillation.

Commercial Garlic Oil is typically standardized to a minimum of 98% total sulfur compounds, ensuring consistent potency for antimicrobial, antioxidant, and cardiovascular applications. It is widely used in dietary supplements, functional foods, and pharmaceutical research.

Function & Mechanism

  • Antimicrobial activity: Organosulfur compounds disrupt microbial cell membranes and inhibit key enzymes.
  • Antioxidant defense: Scavenges free radicals and enhances endogenous antioxidant systems.
  • Cardiovascular support: Helps maintain healthy lipid levels and supports normal platelet function.
  • Immune modulation: Stimulates macrophage and natural killer cell activity.
  • Anti-inflammatory action: Modulates inflammatory pathways, including NF-κB.
